Fungal amylase L is an alpha amylase used for dextrinizing (liquefying) and saccharifying (releasing glucose and maltose from) starch.
Prolonged use of Fungal Amylase L for starch hydrolysis will result in non-hygroscopic syrups with high levels of maltose, low levels of glucose, decreased tendency to crystallize, and high fermentability.
