Cellulase AN
Cellulase AN
9012-54-8
Derived from fermentation of a selected strain of Aspergillus niger, this is a food-grade enzyme in powder form.
Used to effectively modify, hydrolyze, or degrade the carbohydrate Cellulose.
Typical applications include releasing bound water from adsorbent gums, filtration improvement, viscosity reduction, degradation of soluble gums and fiber, and freeing materials from enveloping cellulosic matrices.
Essentially free from protease, amylase, and lipase activities.
