Ascorbyl Palmitate [CAS: 137-66-6] is a 16-carbon saturated fatty acid ester that is produced from Ascorbic acid and Palmitic acid. Ascorbyl Palmitate is also known as Vitamin C Palmitate, L-Ascorbic acid 6-hexadecanoate, 6-O-Palmitoylascorbic acid, or by its IUPAC name [(2S)-2-[(2R)-4,5-Dihydroxy-3-oxo-2-furyl]-2-hydroxy-ethyl] hexadecanoate. Ascorbyl Palmitate supplied by Parchem is approved as a food additive in the US, EU, Australia, and New Zealand, registered as E Number E304.

Ascorbyl Palmitate is a fat-soluble form of Vitamin C.  The Ascorbyl Palmitate molecule is amphipathic, meaning that one end of the molecule is water-soluble and the other end of the molecule is fat-soluble. Ascorbyl Palmitate is used as an anti-oxidant in foods, pharmaceuticals, nutritional supplements, skin care products, and in certain cosmetics. It is also used as a preservative for certain food and beverage products.
