It is a highly concentrated, clear, colorless organic liquid with a sharp acetic odor, which produces acetic acid (the active ingredient in vinegar) when reacted with water or air moisture. There are also several manufacturing processes for acetic anhydride.

This compound is an important reagent used primarily in the manufacture of cellulose acetate fibers and plastics. Other applications for acetic anhydride are in the making of aspirin, as well as industrial chemicals, pharmaceuticals, perfumes, flavors, synthetic fibers, dyes, explosives, and herbicides. Additionally, it can be used as a dehydrating agent in reaction mixtures to help remove water, and as an esterifying agent in the preparation of modified food starch.
