Dextrins are modified starches which are a mixture of polymers and glucose units lined by glycosidic bonds. Dextrins can be white, yellow, or brown powders which are usually water soluble. Dextrins are produced by heating starch powders under acidic conditions, causing them to undergo hydrolysis and re-branching of the starch molecule. Dextrin is a type of oligosaccharide, which is a saccharide polymer containing a number of attached component sugars like fructose. Fructo-oligosaccharides are often found naturally in fruits and vegetables such as bananas, onions, chicory root, garlic, asparagus, barley, wheat, and more. Some grains and cereals also contain fructo-oligosaccharides, but the highest concentration of natural fructo-oligosaccharides is found in the Jerusalem artichoke and its relative yacón.
Dextrin and other naturally occurring polysaccharides contain inulins which belong to a family of dietary fibers often found in nutritional supplements. Polysaccharides like dextrin are increasingly being used in the production of processed foods and beverages.
