Oleic acid [CAS 112-80-1] is supplied as an odorless, pale to colorless oily liquid.  It is a monounsaturated 18-carbon fatty acid that naturally exists in both animal fats and vegetable oils. Oleic acid is also known as Omega-9, 9(Z)-Octadec-9-enoic acid,  (9Z)-Octadecenoic acid, (Z)-Octadec-9-enoic acid, cis-9-Octadecenoic acid, and by its Lipid Number 18:1 cis-9.

Oleic acid is naturally produced by the enzymatic action of the enzyme Stearoyl-CoA 9-desaturase acting on the protein stearoyl-CoA. This enzymatic reaction drives the dehydrogenation of stearic acid, which yields the monounsaturated derivative oleic acid. Oleic acid is also released by the natural decomposition process of various insects such as ants and bees.

Oleic acid is one of the most common and widely distributed fatty acids found in nature. The highest concentrations of natural Oleic acid are found in oils extracted from avocados, olives, and canola seeds. Some of the other sources for oleic acid are beef-tallow based oils, coconut oils, peanut oils, lard oils, and palm oils. Oleic acid is also found in butterfat, corn oil, soybean oil and sunflower oil.  Additionally, Oleic acid is used in food products targeted towards baking, skin care products, soaps & detergents, lubricants, and in coatings applications.
